SHMURAH MATZA

This coming Wednesday night (April 8th) starts the Jewish holiday of Passover.  During the eight days of the festival special foods are prepared, the most famous and universally known being the Matzah or unleavened bread.  For the more orthodox, even the Matzah has to be specially prepared by hand and baked for 18 minutes – no more, no less – in strict accordance with Jewish law.  This special Matzah is called Shmurah Matzah or guarded matzah and is identical to the bread which the Hebrews baked for sustenance when they fled from Egypt.
